- Regal Springs Tilapia Fillets – 2 halved lengthways
- 3tbs Veg Oil
- Lettuce – sliced
- Mango salsa – mix 1 mango diced 1cm cubes, ½ red onion, ½ red chilli and ½ tomato all finely diced, a handful of coriander leafs chopped, 1tbs peanut oil, juice of 1 lime and 1tsp sugar. Season
- Sour cream – add lime juice and a dash of chilli powder if desired.
- Jalapenos to serve
- 4 Taco Boats warmed.
- Heat oil in a heavy based frypan until smoking. Back off the heat to med/high.
- Cook the fillets for no more than 2 minutes each side and remove and season.
- Break up the fillets and fill boats with ingredients of choice. Top with mango salsa and jalapenos.
