- Regal Springs Tilapia Fillets – 2 halved lengthways
- 3tbs Veg Oil
- Lettuce – sliced
- Avocado (1) – smashed and mixed with juice of 1 lime, 1 red chilli and ¼ red onion very finely diced and 1tbs olive oil, salt & pepper
- Salsa – finely diced tomato (1) and ½ red onion, chopped handful of coriander leafs and 1tbs jalapenos and 1tbs of olive oil. Season
- Sour cream – add lime juice and a dash of chilli powder if desired
- Extra coriander leafs
- Extra jalapenos
- 4 Taco Shells heated
- Heat oil in a heavy based frypan until smoking.
- Back off the heat to med/high.
- Cook the fillets for no more than 2 minutes each side and remove and season.
- Compile Taco with your favourite mix. Top with smashed avocado sour cream, coriander leafs and jalapenos.
- Munch the Taco.
